Baingan Bharta

 


Ingredients (for 3 servings):


·      Bringal – 3/4th kg

·      Oil – 5-6 Tbsp

·      Cumin seeds (Jeera) – 1 Tbsp

·      Green Chillies – 2-3

·      Garlic – 1 bulb

·      Onions – 3-4

·      Tomato – 1-2

·      Ginger Paste – 1 Tsp

·      Kashmiri Chilli Powder – 1 Tsp

·      Tumeric Powder – ½ tsp

·      Dhanajeera Powder – 1 Tsp

·      Garam Masala Powder – 1 Tsp

·      Sugar – 1 Tsp

·      Salt to taste

·      Corriander – ½ Cup

·      Asafoetida (Hing)

·       Curd – 1 Tbsp (Optional)

 

 

Method:

 

·       Take some oil in a utensil (preferably in a kadhai).

·       Add chopped garlic , jeera , chopped green chillies, asafoetida.

·       Fry it for 2 mins and add chopped onions to it.

·       Add salt and sugar, and when the onions caramelize, add ginger paste and fry it for 5 mins.

·       Add finely chopped tomatoes to it and fry it till they soften.

·       After the tomatoes are soft, add the spices and cook till the oil separates from the spices.

·       Roast the brinjals directly over the flame till they soften.

·       Keep them aside and let them cool.

·       Peel the skin off with your hands and mash the brinjals.

·       Mix the brinjals to the onion mixture and let it cook on low flame for 5-7 mins.

·       Sprinkle the coriander and mix it. (If you’re adding curd, add it just after you switch off the flame.)
