Bhindi Masala

 


Ingredients (for 3 servings) :
  • Lady Fingers - 1/2 kg
  • Onions - 2-3
  • Tomatoes - 2
  • Ginger Paste - 1 Tsp
  • Green Chillies - 2-3
  • Garlic - 5-6 cloves
  • Cumin seeds - 1 tbsp
  • Besan - 2-3 Tbsp
  • Curd - 1/2 cup
  • Spices -
     Kashmiri Chilli Powder - 1 tsp
     Tumeric Powder - 1/2 tsp
     Dhanajeera Powder - 1 tsp
     Garam Masala Powder - 1 tsp
  • Sugar - 1 tbsp
  • Salt to taste
  • Oil - 6-7 tbsp
Method: 

Cut each lady finger into 2 pieces and coat them with 1/2 tsp chilli powder , a little bit of salt and besan and keep it aside for 20-30 minutes. 
Heat oil in a kadhai and add finely chopped garlic , chillies , cumin seeds and let it fry for a minute or two.
Add finely chopped onions and let them fry till they are golden brown.
Meanwhile , make a puree of two tomatoes and add it to the fried onions.
Cook the tomatoes for about 5-10 mins.
Add the spices , salt and sugar and let it cook till the oil separates from the spices.
Add beaten curd to it.
Add the coated lady fingers to another utensil and fry them till they are soft.
Add the fried lady fingers to the gravy and cook for another 5 minutes and it's good to go!

(Can be had with fried fish too)
