Chicken Biryani... Everyone's favourite for special occasion !





Ingredients (for 3-4 Servings):
  • Oil - 7-8 Tbsp
  • Whole Garam Masalas
        Tej - 4 Inch Piece
        Large Cardamom - 3-4
        Small Cardamom - 3-4
        Star Anise - 2
        Whole Mace (Javantri) - 2-3
        Cloves - 6-7
        Whole Black Pepper - 7-8
        Black Cumin (Shahjeera) - 1 Tbsp
  • Green Chillies - 2-3
  • Kashmiri Chillies - 2-3
  • Garlic - 8-10 Cloves
  • Ginger Paste - 2 Tbsp  
  • Onions - 7-8
  • Tomatoes - 2-3 
  • Curd - 1/2 cup
  • Saffron - A pinch
  • Rice - 4-5 cups
  • Chicken - 1/2 kg 
  • Cumin seeds (Jeera) - 1 Tbsp
  • Kashmiri Chilli Powder - 1 Tsp
  • Tumeric Powder - 1/2 Tsp
  • Dhanajeera Powder - 2 Tsp
  • Garam Masala Powder - 1 Tsp
  • Coriander Leaves - 1/2 - 1 Cup
  • Kewra Water - 1-2 Tbsp (optional)
  • Salt to taste
  • Sugar - 1 Tbsp
Method:

Add oil to the cooker and heat it.
Add garlic , whole garam masalas , green chillies , red chillies and jeera to it and fry it for a minute or two.
Add 3-4 finely chopped onions to it and cook it till golden brown.
Add tomatoes and cook till they are soft.
Add ginger paste to it and cook it for 2-3 mins.
Add tumeric powder , Kashmiri chilli  powder , dhanajeera powder and garam masala powder to it and cook till the oil separates from the paste.
Add saffron to the curd and let it stay for 5 mins.
Add it to the paste.
Add the chicken , mix it with the paste and let it cook for 5 minutes in open.
Add 2-3 glasses of water to it and cook the chicken in the cooker for 3 whistles , then lower the flame and let it cook for another 10 minutes.
Turn off the flame and let the pressure release.
Open the cooker and add the washed rice to it. (No additional water required)
Add salt and sugar and mix it well and let it cook again for 1 whistle , lower the heat and let it cook for another 4-5 mins. (NOT MORE THAN THAT)
Turn the stove off, let the pressure release and add corriander leaves and kewra water to it. 
Cut the rest of the onions in slices and deep fry them with some sugar till they turn dark brown and sprinkle them over the biryani.
