Dhan Dar and Fish Patio
Dhan Dar and Fish Patio consists of plain white rice , known as "Dhan" ,
accompanied by yellow tur dar and spicy fish gravy . It is the favourite Parsi
homemade dish made for lunch or dinner on auspicious occasions . This simple
but wholesome and delicious meal is sure to leave you licking your fingers.
Here is its recipe .
Ingredients for Rice (4 Servings) :
- Rice - 6 Cups
- Ghee - 2 Tbsp
- Salt to taste
Ingredients for Dar :
- Tur Dal - 3 Cups
- Ghee (or Butter) - 3 Tbsp
- Salt to Taste
- Tumeric Powder - 1/2 Tsp
Ingredients for Fish Patio :
- Pomfret (or any other fish) - 4
- Onions - 3
- Garlic - 1 Bulb
- Green Chillies - 4-5
- Cumin Seeds - 1 Tbsp
- Sugar - 1 Tbsp
- Salt to Taste
- Turmeric Powder - (1/2 Tsp)
- Coriander - 1/2 Cup
- Tomato - 1
- Oil - 6-7 Tbsp
Method for Rice :
- Wash the rice and leave it aside.
- Add ghee in a utensil and then add rice and salt to it.
- Add water till its level reaches double the height of the rice .
- Boil it on high flame initially till the level of water and rice becomes the same .
- Lower the heat and cover the utensil and cook it till the water is no longer visible at all.
Method for Dal :
- Wash the dal and let it soak in water for half and hour to one hour.
- Pressure cook it on high flame for 4 whistles and 20 minutes thereafter on low flame.
- After the pressure gets released , add turmeric powder , salt and ghee to it and cook it for 2 more minutes.
Method for Fish Patio :
- Marinate the Pomfrets with Kashmiri Chilli Powder , turmeric powder and salt and leave it aside for 1/2-1 hour.
- In the meanwhile , heat oil in a utensil , add finely chopped garlic , finely chopped green chillies and cumin seeds and fry them for a minute.
- Add the finely chopped onions and fry them till they are golden-brown.
- Add sugar to it.
- Now , add finely chopped tomato and cook it till it softens.
- Add the marinated fish and cook it for 5 minutes.
- After 5 minutes , add 2-3 cups of water to it , cover the utensil and cook the fish till they are almost done.
- Add finely chopped coriander leaves to it just 2 minutes before turning off the stove.
The way to serve it is a layer of rice followed by dal on top of rice
and patio over the dal.
