Mutton Dhansak
Dhansak is one of the most well-known Parsi dishes the Parsi dish that
is tried out the most by the non-parsis. Let's have a look at the recipe that
gives Dhansak an amazing flavour ! (If you're a vegetarian , potatoes or soya
chunks can be added instead of mutton.)
Ingredients for Rice (4 Servings) :
- Rice - 6 Cups
- Cumin Seeds - 2 Tbsp
- Whole Garam Masalas - Cinamon (3 inch piece broken into 2-3 pieces) , Clove (5-6) , Black Pepper (7-8)
- Salt to Taste
- Oil - 2 Tbsp
- Sugar - 1 Tbsp
Ingredients for Dal :
- Tur Dal - 1 Cup
- Masoor Dal (Orange Dal) - 1/4th Cup
- Yellow Moong Dal - 1/4 Cup
- Chana Dal - 1/4th Cup
- Onions - 3
- Tomatoes - 1-2
- Green Chillies - 2
- Kashmiri Chillies -2
- Garlic - 7-8
- Ginger Paste - 1 Tbsp
- Corriander - 1 Cup
- Mutton - 250 g
- Powdered Spices - Kashmiri Chilli Powder (1 Tsp) , Tumeric Powder (1/2 Tsp) , Dhaanajeera Powder - (2 Tsp) , Sambhar Masala (1 Tsp) , Garam masala Powder (1 Tsp)
- Cumin Seeds - 1 Tbsp
- Oil - 6-7 Tbsp
- Sugar - 1 Tsp
- Salt to Taste
- Pumpkin - 4 inch piece
- Baby eggplant - 2
- Tamarind - 2 Inch Piece
Method for Rice :
- Heat oil in a utensil and add sugar and heat it on high flame till the sugar turns brownish-black.
- Lower the heat and add cumin seeds and whole garam masalas and within a few seconds add the appropriate amount of water to cook the rice.
- Boil the water on high flame and add rice and salt to it.
- Cook till the rice is done.
Method for Dal :
- Soak all dals in water for an hour (optional).
- Heat oil in a cooker , add green chillies , Kashmiri chillies , garlic and cumin seeds for a minute and add finely chopped onions to it and fry until they are soft and pink
- Add ginger paste and finely chopped tomatoes and fry till they are soft.
- Add all the powdered spices till the oil separates from it.
- Add mutton , chopped pumpkin , chopped baby eggplant and soaked tamarind , and fry it for about 5 minutes and add the soaked dals , sugar and salt to it and add 2-3 cups of water and pressure cook it for 4 whistles and put it on low flame for 25 minutes after the whistles.
- After the pressure is released , open the cooker and mash the dal and add finely chopped corriander to it.
Tastes good with Kachumber (Chopped onion , cucumber , corriander and
lemon)
