Sweet Carrot Chutney
Sweet carrot chutney is a chutney that goes well with any type of food, be it
vegetables or dals or anything ! People with a sweet tooth will surely love
this sweet and dry chutney! It tastes quite similar to the achaar served at
Parsi weddings. Let's have a look at this unique recipe :
Ingredients :
- Carrots - 1 Kg
- Raisins - 200-250 g
- Jaggery - 100 g
- Sugarcane vinegar - 1/2 cup
- Garam masala powder - 1 Tsp
- Kashmiri Chilli Powder - 1 Tsp
- Dhanajeera Powder - 1/2 Tsp
- Sugar (optional)
- Oil - 1 cup
- Salt to taste
Method :
- Grate the carrots and keep aside.
- Heat oil in a utensil , add the carrots and raisins to it and cook them till halfway done.
- Add sugarcane vinegar and cook it till it's almost done.
- Add garam masala powder , Kashmiri Chilli powder , Dhanajeera Powder and salt and cook for another 5-10 minutes.
- Finally , add jaggery and cook it for another 5-10 mins , or till the jaggery has totally melted and it's done!
Tip: It's better to have it the next day so that the flavour gets well
absorbed.
