Pork Vindaloo
Pork Vindaloo is a Goan dish which is highly popular among Parsis too. It is a
tasty dish with a sweet and tangy flavour which can be prepared without too
much of effort. Let us have a look at its recipe.
Ingredients (3-4 Servings) :
- Pork - 500 g
- Ginger Paste - 1 Tbsp
- Garlic - 10-12 Cloves
- Kashmiri Chillies - 4-5
- Green Chillies - 2
- Cumin Seeds - 2 Tbsp
- Onions - 3-4
- Sugar - 3 Tbsp
- Sugarcane Vinegar - 2 Tbsp
- Turmeric Powder - 1/2 Tsp
- Garam Masala Powder - 1/2 Tsp
- Whole Garam masalas - Cinamon (Tej) - 2-3 Inche piece , Cloves (Laung) - 5-6 , Whole Black pepper - 10 , Green Cardamom (chhoti elaichi) - 5-6
- Salt to taste
- Oil - 4-5 Tbsp
Method :
- Make a paste out of Kashmiri Chillies , garlic , Cumin seeds , Sugar , Sugarcane vinegar and whole garam masalas.
- Marinate the Pork with salt and this paste and leave it aside for minimum half an hour. (To get better results , marinate it overnight)
- Heat oil in a cooker and add finely chopped onions and green chillies to it.
- When the onions turn golden-brown , add the ginger paste , turmeric powder , garam masala powder and let it fry for 2-3 minutes.
- Add the marinated pork to it and add 2-3 cups of water and pressure cook it for 4 whistles and 35-40 minutes on low flame.
- After the pressure from the cooker is released , garnish the pork vindaloo with Potato straws (sali).
People who do not eat Pork can use chicken , mutton , fish or prawns
instead of it since it is a versatile dish.
Vegetarians can try adding soya chunks to it instead of Pork.
