Sweet Corn Soup (with vegetables and chicken)


It is a healthy soup with goodness of vegetables as well as chicken and is delicious too. Children as well as adults enjoy having this soup. It is something that can had year round and is a good stomach filler so it satisfies hunger easily. Let us have a look at its recipe.

Ingredients (5-6 Servings):
  • Carrots - 2
  • Spring Onions - 3
  • Babycorn - 4-5
  • Sweet Corn - 1
  • Chicken - 250 g
  • Cornflour - 4-5 Tbsp (Can be adjusted according to the desired thickness)
  • Egg -1 
  • Salt to Taste 
  • Sugar - 1 Tbsp
  • Red Chilli Sauce (Optional)
  • Soy Sauce (Optional)
  • Ginger - 1-2 Inch Piece
  • Black Pepper Powder - 1 Tbsp
  • Butter - 1-2 Tbsp
Method :
  • Boil the chicken in 4-5 glasses of water for 20-25 minutes till the chicken is tender.
  • Remove the chicken from the chicken stock and shred it into tiny pieces.
  • Strip the corn from the cob and chop all the vegetables finely.
  • Heat butter and finely chopped ginger in a utensil and add finely chopped vegetables , shredded chicken and the stripped corn , and fry it for around 10 minutes.
  • Add the chicken stock to these vegetables and bring it to a boil and then lower the flame.
  • Add sugar , salt and black pepper powder to it
  • Meanwhile dilute the cornflour in about half cup of water and add it to the soup in order to thicken it to the desired consistency.
  • Let it cook for 3-4 minutes.
  • Turn off the stove and when it is about 25% cooler , gradually add a beaten egg to it. (Add the beaten egg one tbsp at a time and keep stirring it continuously as you add the egg).
  • It can either be had by itself or you can add red chilli sauce and soy sauce to it.
