Kopra Pak - Nayiral ki Barfi - Coconut Fudge (Rose Flavour)
Kopra Pak is a delicious and easy to make sweet dish which is universally
popular. Parsis refer to it as Kopra Pak whereas others refer to it as Nariyal
ki Barfi or Coconut Fudge. It tastes equally good with or without rose
flavour. Let us have a look at its recipe.
Ingredients (For approx 1.5 Kg) :
- Fresh Coconuts - 2
- Full Fat Milk (Preferably Buffalo Milk) - 1 Litre
- Sugar - 1 Cup (Can add more or less as per your taste)
- Green Cardamom (Chhoti Elaichi) Powder - 1 Tsp
- Nutmeg (Jaifal) Powder - 1/2 Tsp
- Rose Syrup - 4-5 Tbsp
- Rose Essence - 5-6 Drops
- Rose Water (Optional)
- Rose Petals - 3-4 red roses (Optional)
- Dry Fruits for Garnishing (The ones used by us are almonds and cashew nuts)
Method :
- Grind the coconuts in the mixer roughly by adding 1/4th cup milk to it. (It should NOT become a paste).
- Bring milk to a boil in a non-stick utensil and add sugar to it , stirring it continuously.
- Reduce the milk till it reaches 3/4th of its quantity and add green cardamom powder and nutmeg powder to it.
- Now add the ground coconut and rose water to it and cook it with the milk till it thickens to a binding consistency and then add rose essence to it.
- Add the rose syrup and mix it thoroughly.
- Let it cool down and set it in any utensil. (Preferably a Thaali as seen in the picture).
- Garnish it with bits of almonds and cashew nuts or with dry fruits of your choice and refrigerate it for minimum 4-5 hours and after taking it out of the refrigerator , make pieces of the desired shape.
