Rum and Raisin Christmas Cake

 

Rum and Raisin cake is a must have for the Christmas season and is easy to make as well. You can bake it in an oven if you have one , but even if you don't have one , you can just as easily bake it in a cooker and still get the perfect cake. While we have used walnuts , raisins and cashew nuts , you can also add dried plum , black currants and any other dried fruits as per your liking to it. Enjoy your Christmas having fun baking cake by yourself. Let us have a look at its recipe.

Ingredients :
  • All purpose flour (Maida) - 250 g
  • Eggs - 2
  • Vanilla Essence - 1/2 Tsp
  • Cocoa Powder - 1/2 Cup
  • Rum - 1/2 Cup
  • Raisins - approx 50 Pieces
  • Walnuts - 10-12 Pieces
  • Cashew Nuts - 10 Pieces
  • Castor sugar / Sugar - 1 Cup
  • Baking Powder - 1 Tbsp
  • Baking Soda - 1/4th Tsp
  • Butter - 1/2 Cup 
  • Milk - Enough to make a thick paste of a pourable consistency
Method :
  • Soak the raisins in rum overnight.
  • Beat the eggs in a mixing bowl and add castor sugar to it. (If you aren't using castor sugar , grind the regular sugar to a fine powder in a mixer).
  • Add Vanilla Essence and butter to it and whisk it for about 5 minutes.
  • Now , add all purpose flour and cocoa powder , baking powder and baking soda and mix it gently , adding milk a little bit at a time till you get a thick but pourable consistency.
  • Break the cashew nuts and walnuts into pieces of the desired size.
  • Add the nuts and the soaked raisins to the mixture along with the remaining rum and mix it together gently.
  • Take a cooker WITH the ring and WITHOUT the whistle and preheat it for 10 minutes on medium flame.
  • Meanwhile , grease the baking tin with butter on all the sides and add the mixture to it.
  • Once the cooker is preheated , put a utensil stand in the cooker and put the cake tin on it.
  • Put the lid back on WITHOUT the whistle and bake it for approx 45 minutes / till it's done , on medium flame for the first 20 minutes and then on low flame for the rest of the time. 
  • To check if the cake is thoroughly baked , pierce a toothpick in the centre of the cake , if the toothpick comes out clean , the cake is well baked and if the toothpick has cake mix on it , it needs to be baked further.
  • Once it is done , remove the cake from the cooker and let it cool for half an hour. Loosen the sides with a knife turn it over on a plate. 
This cake can be served with Vanilla ice cream too.
