Cooked eggs on tomatoes recipe in Parsi style
Tamota par eedu (Eggs on tomatoes) is a Parsi dish which can be had as a breakfast , lunch , dinner or even as a side dish with the main course. It is very healthy because it combines the goodness of eggs and tomatoes and is really delicious. Parsis love every variation of eggs and this dish would definitely top the list ! Let us have a look at its recipe. 

Ingredients (3-4 Servings) :
  • Onions - 3-4
  • Tomatoes - 6
  • Ginger Paste - 1/2 Tsp
  • Garlic - 7-8 Cloves
  • Green Chillies - 3
  • Sugar - 1-2 Tbsp
  • Kashmiri Chilli Powder - 1 Tsp
  • Turmeric Powder - 1/2 Tsp
  • Oil - 5-6 Tbsp
  • Coriander - 1/2 Cup
  • Salt to Taste 

Method :
  • Heat oil in a pan and add finely chopped garlic and fry it till they become golden.
  • Add finely chopped green chillies to it and add finely chopped onions to it within a minute.
  • When the onions are half done , add salt , sugar and ginger paste to it.
  • When the onions turn golden , add finely chopped tomatoes and cook them till they soften.
  • Add Kashmiri Chilli powder and Turmeric powder to it and cook till the oil separates from the mixture.
  • Add half the quantity of finely chopped coriander and crack the eggs one by one over the mixture.
  • Add a little more salt to each egg and sprinkle the eggs with the remaining coriander.
  • Cover the pan with the lid and cook till the eggs are done.
