Akoori
Akoori is a tasty Parsi dish made of eggs. It is usually had for breakfast but
can be had as a side dish for lunch or dinner as well. It is known as Anda
Bhurji in Hindi. Let us have a look at its recipe.
- Eggs - 4
- Onions - 4
- Tomatoes - 2
- Green Chillies - 2-3
- Garlic - 5-6 Cloves
- Ginger Paste - 1/2 Tsp
- Kashmiri Chilli powder - 1/2 Tsp
- Turmeric Powder - 1/2 Tsp
- Sugar - 1 Tsp
- Salt to Taste
- Coriander leaves - 1/2 Cup
- Oil - 4-5 Tbsp
Method ;
- Heat oil in a utensil and add finely chopped garlic to it.
- Once the garlic turns little brownish, add finely chopped green chillies to it.
- After a minute, add finely chopped onions to it and fry them till they are soft and pink.
- Add salt and sugar to it and let the onions turn a little brownish.
- Add ginger paste to it and fry it for a minute.
- Add finely chopped tomatoes to it and cook them till they are soft.
- Add Kashmiri Chilli Powder and Turmeric Powder and cook it for a minute and then add the coriander leaves to it.
- Turn off the stove and break the eggs into the mixture. (In order to make the akuri fluffy, add 2 Tbsp water/Milk to the mixture and cook it, stirring it continuously till it reaches the required consistency.)
