Ravo
Ravo is a delicious Parsi sweet dish prepared mainly on happy occasions like
birthdays, anniversaries etc. It tastes sort of similar to sheera. Let us have
a look at its recipe.
Ingredients (3-4 Servings) :
- Milk - 350-400 ml
- Fine semolina (Bareek Ravo) - 5 Tbsp
- Sugar - 1/2 Cup (or as per your taste)
- Green Cardamom (Chhoti Elaichi) Powder - 1/2 Tsp
- Nutmeg (Jaifal) Powder - 2 pinches
- Vanilla Essence - 5-6 drops
- Ice-cream essence - 2-3 drops
- Rose essence - 2-3 drops
- Dry fruits (Almonds/ Cashew Nuts/ Raisins) (Optional)
- Ghee - 1 Tbsp
Method :
- Heat ghee in a utensil on low flame and once it melts, add milk to it. Now, bring it to a boil on high flame.
- Add sugar to it and let it melt.
- Add fine semolina, stirring it continuously so that lumps aren't formed.
- Stir it till it thickens to the required consistency. (It will thicken even after the stove is turned off)
- After turning the stove off, add green cardamom powder and nutmeg powder and essences (Vanilla essence, ice-cream essence and rose essence) to it.
- If you're adding dry fruits , you'll have to scrape it (or break it into tiny pieces) and fry them separately and sprinkle them over the ravo.
