South Indian Rasam

 

Rasam
Rasam is a South Indian dish which can be had with rice or as an immunity boosting soup. It has a sweet and tangy taste and doesn't take much time to cook. Let us have a look at its recipe.

Ingredients (4 Servings) :
  • Tamarind (Imli) - 2 pieces (whole)
  • Tomato - 1
  • Oil - 4-5 Tbsp
  • Garlic - 1 whole bulb
  • Cumin Seeds (Jeera) - 1 1/2 Tbsp
  • Green Chillies - 2-3
  • Curry leaves - 2-3 Stems
  • Coriander leaves - 1/2 Cup
  • Kashmiri Chillies - 2
  • Fenugreek (Methi) Seeds - 1 Tsp
  • Black Pepper powder - 1/2 Tsp
  • Turmeric Powder - 1/2 Tsp
  • Kashmiri Chilli Powder - 1 Tsp
  • Jaggery - 1 Tbsp
  • Salt to Taste
  • Asafoetida (Hing) - 2 Pinches
Method :
  • Soak tamarind and finely chopped tomatoes in a glass of water for half an hour.
  • Now, squeeze and remove the pulp of the tamarind in the water and also squeeze the tomato in the same water.
  • Add peeled garlic , roughly chopped green chillies , cumin seeds, curry leaves,  and fenugreek seeds in a pestle and grind it roughly.
  • Heat oil in a utensil and add Kashmiri Chillies and fry them for a minute.
  • Now , add the roughly ground mixture to it and fry it for around 2-3 minutes.
  • Add Turmeric powder, Kashmiri Chilli powder and Black pepper powder to it and fry them for a minute.
  • Now add water containing tomato and tamarind to the mixture and boil it for around 5 minutes.
  • Add jaggery, coriander leaves and salt and boil them for another 5 minutes.
