Papeta par Eedu
Papeta par Eedu, also known as "Eggs on Potatoes" is a delicious Parsi dish
which can be had for breakfast, lunch or dinner, just anytime! It can also be
had as a side dish. Let us have a look at its recipe.
- Potatoes - 4-5
- Onions - 2-3
- Eggs - 4
- Garlic - 4-5 Cloves
- Ginger Paste - 1/2 Tsp
- Cumin Seeds (Jeera) - 1 Tsp
- Green Chillies - 2
- Curry leaves - 3 Stems
- Coriander Leaves - 1/2 Cup
- Sugar - 1 tsp
- Black Pepper Powder - 1 Tsp
- Salt to Taste
- Oil for frying
Method :
- Heat oil in a utensil, preferably a non-stick pan and add finely chopped garlic, cumin seeds and green chillies to it. Let it fry for half a minute and add finely chopped onions and curry leaves to it. Fry them till the onions are soft.
- Add salt, sugar and ginger paste to it and let them fry for another minute.
- Add fine slices of potatoes to it and cook them till they are almost done.
- Add pepper powder and finely chopped coriander to it. Cook it for another minute.
- Break the eggs over it and sprinkle just a bit of black pepper powder and salt over the eggs. Cover the pan with a lid and let it cook till the eggs are thoroughly done.
Tip - You can add 1-2 Tbsp of water to the pan for the eggs to cook
quickly.
