Shredded Chicken Cutlets
Shredded Chicken Cutlets can be had for breakfast, snacks and can also be had along with the main course for lunch/dinner. It is bland yet tasty and is ideal for those who do not like too many spices in their cutlets. Have a look at its recipe.
Ingredients (For 1 Dozen Pieces):
- Chicken Breast - 1 (Cut into 4 pieces)
- Potatoes - 2-3
- Grated Cheese - 1/2-3/4th cup
- Carrots - 2
- Black Pepper Powder - 1 Tsp
- Ginger paste - 1 Tsp
- Garlic - 7-8 Cloves
- Green Chillies - 3
- Coarse Semolina (Jada Rava) - 1/2 Cup
- Eggs - 2
- Salt to Taste
- Oil for frying
Method :
- Peel the potatoes and pressure cook it along with the chicken for 4 whistles and 15 minutes on low flame.
- After the pressure from the cooker is released, finely shred the chicken and mash the potatoes and mix both together.
- Add grated cheese, grated carrots, black pepper powder, finely chopped green chillies, ginger paste, finely chopped garlic and salt to it and mix thoroughly using your hands.
- Leave it aside for around half an hour.
- Beat the eggs in a bowl with a bit of salt and pepper and in add semolina in a small plate.
- Take portions of the chicken-potato mixture and give them the shape of cutlets by flattening them.
- Heat oil in a non-stick pan, coat each cutlet with semolina , dip it in the egg mixture and fry them till they turn golden-brown on both sides. (Since the ingredients of the cutlets are already cooked, we only need to fry them for a short while till the coating turns golden-brown)
It can be had with tomato ketchup or green chutney.
