Fried Tendli Sabji | Fried Ivy Gourd Recipe
Ivy Gourd, also known as Tendli or Gilora, can be made in a variety of ways, however, I have made the fried version. Have a look at its recipe.
Ingredients (3-4 Servings) :
- Ivy Gourd - 1 kg
- Onions - 4
- Tomatoes - 1-2
- Ginger Paste - 1 Tsp
- Garlic - 6-7 Cloves
- Powdered Spices - Kashmiri Chilli Powder - 1 Tsp, Turmeric Powder - 1/2 Tsp, Dhanajeera Powder - 1 Tsp, Sambhar Powder - 1/2 Tsp
- Sugar - 1 Tbsp
- Salt to Taste
- Oil for deep frying
Method :
- Cut each ivy gourd vertically into 4 pieces and deep fry them with a little salt.
- Take out the fried ivy gourd, drain out the excess oil and keep aside.
- In the same utensil, just leave 4-5 tbsp of oil, draining the rest.
- Fry finely chopped garlic andonions and fry them till they are golden brown.
- Now, add finely chopped tomatoes to it and cook till they are soft.
- Add ginger paste, salt, sugar and powdered spices to it and fry them for 2 minutes.
- Once the oil separates from the mixture, add the fried ivy gourd to it and cook them for 5 minutes, covering it with a lid.
