Pav Bhaji
Pav Bhaji is a common Indian dish served at restaurants and is also a popular street food in Mumbai. It is delicious as well as healthy due to the combination of various vegetables added to it. Let us have a look at its recipe.
Ingredients (3-4 Servings):
- Cauliflower - 500 g
- Carrots - 2
- Green Peas - 250 g
- Capsicum - 1-2
- Potatoes - 1-2
- Coriander leaves - 1/2 cup (optional)
- Tomatoes - 2
- Onions - 3
- Green chillies - 2
- Sugar - 1 - 1 1/2 tbsp
- Tomato ketchup - 1 tsp
- Ginger paste - 1 tsp
- Garlic - 7-8 cloves
- Powdered spices - Kashmiri chilli powder- 1 tsp, Turmeric powder - 1/2 tsp, Dhanajeera powder - 1/2 tsp, Garam masala powder- 1 tsp, Dry mango power (Aamchur powder) - 1 tsp, Chaat Masala - 1 tsp
- Salt to taste
- Butter - 3-4 tbsp
- Juice of 1 lemon
- Laadi pav - 6-8
Method :
- Finely chop the the vegetables and peel the green peas and pressure cook them for 4 whistles and 20 minutes on low flame.
- Melt 2 tbsp butter in a utensil and add finely chopped garlic and finely chopped green chillies to it and fry for a minute.
- Now, add finely chopped tomatoes to it and cook till they soften.
- Add finely chopped onions to it and cook till they soften.
- Add sugar, salt and ginger paste to it and fry them for another minute.
- Add the powdered spices and let them fry till the butter separates from the mixture.
- Now add the tomato ketchup, coriander leaves and the boiled vegetables, mix it thoroughly and mash it with a masher. Cook it for a minute or two, covering it with a lid.
- Turn off the stove and add juice of half a lemon to it.
- Now add 1 tbsp butter and mix well.
- Cut each laadi pav horizontally and keep aside.
- Add little butter at a time to the tava, melt it and add a bit of chaat masala and Kashmiri chilli powder to it.
- Wipe the masala with each pav on both sides.
Tip - It tastes good with chopped raw onions and a slice of lemon.
