Dudhi Fry | Fried Bottle Gourd

 

Dudhi Fry
Dudhi is seen as a very bland vegetable, yet if its cooked in this manner, it will turn out really flavourful. If you want to relish bottle gourd, do make it in this manner and serve it with some hot Chapatis. 

Ingredients (3-4 Servings) :

  • Bottle Gourd - 1 kg
  • Onions - 3 (Big)
  • Cumin Seeds (Jeera) - 1 tbsp
  • Whole Garam Masalas - Cinamon Stick - 2 inch piece, Black pepper - 5-6, Cloves (Laung) - 4-5
  • Sugar - 1 tbsp
  • Kashmiri Chillies - 2
  • Garlic - 5-6 cloves
  • Ginger paste - 1 tsp
  • Powdered Spices - Kashmiri Chilli powder - 1 tsp, Turmeric powder - 1/2 tsp, Garam Masala powder - 1/2 tsp
  • Salt to taste
  • Oil for deep frying
Method :
  • Peel the bottle gourd and slit it from middle - length-wise. Now, cut them into fine slices and deep fry them for about 15-20 minutes. After frying, remove them immediately and keep them separately. (Tip - If you keep the container a bit tilted, the excess oil will get drained off the bottle gourd on its own.)
  • In the meanwhile, heat oil in a utensil and add the whole garam masalas and finely chopped garlic to it. Now, add Kashmiri chillies, each broken into two pieces and let it fry for a minute.
  • Add cumin seeds to it and fry for half a minute.
  • Add finely chopped onions to it and fry them till they turn golden. 
  • Add salt, sugar and ginger paste to it and let them fry for a minute.
  • Now, add the powdered spices to it and fry for a minute till the oil separates from the paste and add the fried bottle gourd to it. 
  • Keep mashing it lightly, mix it well, cover it with a lid and let it cook on low flame for around 10-15 minutes. 
  • Serve it with hot chapatis.
