Sambar Quick Recipe
This is quick sambar recipe that is prepared for those who do not eat onions or garlic and is super delicious. It is also really easy to make. It tastes amazing when had with rice, Idli, Dosa and other South Indian dishes. Let us have a look at its recipe.

Ingredients (4-5 Servings):

  • Tur Dal - 2 tbsp
  • Bottle Gourd - 1/4th - 1/2
  • Pumpkin - 100g
  • Tomato - 1
  • Carrot - 1
  • Drumstick - 1
  • Green chillies - 2-3
  • Tamarind - 1-2
  • Powdered spices - Turmeric powder - 1/4th tsp, Kashmiri chilli powder - 1 tsp, Sambar powder - 1 tbsp
  • Ginger paste - 1 tsp
  • Coriander Leaves - 1/2 cup
  • Mustard seeds - 1 tsp
  • Fenugreek seeds - 1/2 tsp
  • Asafetida - 1-2 pinches
  • Curry leaves - 1-2 stems
  • Kashmiri chillies - 2


Method :
  • Wash  tur dal and soak them for half an hour.
  • In the meanwhile, chop bottle gourd, pumpkin, tomato, carrot, green chillies and drumstick into cubes, to the desired size. 
  • Grind the soaked tur dal in a mixer to a thick paste, adding a little water to it.
  • Put the tur dal paste in a cooker with 1 glass of water. Heat it and add the chopped vegetables to it. Add turmeric powder and salt to it
  • Now, add 1 glass water to it and boil it. Now, pressure cook it for 1 whistle and 5 minutes on low flame.
  • In the meanwhile, make a paste out of tamarind by squeezing them in 1-2 tbsp water. (Remove the seeds from the tamarind)
  • Once the pressure from the cooker is released, lightly mix the sambar and adjust the water level as per the desired consistency.
  • Turn on the stove on low flame and add Kashmiri Chilli powder, sambar powder, ginger paste to it and mix well.
  • Now, add the tamarind pulp and finely chopped coriander leaves to it. Bring it to a boil and cook it for 2-3 minutes.
  • Heat oil in a tiny utensil and add mustard seeds and fenugreek seeds , pinches asafetida, curry leaves and Kashmiri chillies and 1/4th tsp Kashmiri chilli powder to it, fry them for 2 minutes and add it to hot sambar.
