Turai Sabji
Turai, also known as ridge gourd is a mild flavoured vegetable by itself but with our recipe, you can turn it into a delicious and flavourful preparation. It can be prepared with very few ingredients. It is a very healthy and nutritious vegetable which should be included in the diet often. The drawback of this vegetable is that its quantity gets reduced significantly when it is peeled, hence you need to take almost  double the quantity of other vegetables. Though many people cook this vegetables unpeeled, I prefer peeling it before cooking. Let us have a look at its recipe.

Ingredients (3 Servings):

  • Ridge Gourd (Turai) - 1 kg
  • Onions - 3 (Big)
  • Garlic - 6-7 cloves
  • Green chillies - 2-3
  • Ginger paste - 1/2 tsp
  • Kashmiri Chilli powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Sugar - 1-2 tsp
  • Salt to taste
  • Oil for frying - 4-5 tbsp
Method:
  • Heat oil in a utensil and add add finely chopped garlic and green chillies to it and let it fry for a minute.
  • Add finely chopped onions and let it fry till they turn golden-brown.
  • Add salt, sugar and ginger paste to it and fry for another minute.
  • Now, add Turmeric powder and Kashmiri chilli powder to it an fry them till the oil separates from the mixture.
  • Now, add the peeled and finely chopped ridge gourd to it, mix well, cover it with a lid and cook it till it reaches a mashable consistency. (Aproximately half an hour)
Tip - If after its fully cooked, there is still a lot of water in the utensil, burn off the excess water on medium flame, keeping the lid slightly open.
