Basundi
Basundi is a delicious Indian dessert which is usually had on special occasions. While it is extremely delicious, it is unbelievably easy to prepare. Let us have a look at its recipe.
Ingredients (4 Bowls) :
- Milk - 1 litre (Preferably full-fat milk)
- Milk powder - 1 cup (Optional)
- Green Cardamom (Elaichi) powder - 1/2 tsp
- Sugar - 1/2 cup (or as needed)
- Saffron (Kesar) - 8-10 strands
- Scrapings of dry fruits of your choice
Method :
- Bring the milk to a boil in a non-stick utensil and lower the flame. Keep on low-medium flame and reduce it till half its quantity, stirring it continuously.
- In the meanwhile, soak Saffron in 2-3 tbsp warm milk in a bowl and keep aside.
- Add milk powder to it and keep boiling it on low-medium flame, till it thickens slightly (Make sure not to thicken it too much, as it will thicken a little more even after turning off the stove)
- Once the milk thickens, add sugar to it and stir continously till it melts.
- Now, add green cardamom powder and Saffron-soaked milk to it and and boil it for another minute.
- Let it cool and then transfer it to a serving bowl and garnish it with scrapings of dry fruits of your choice. (If you want dry fruit-loaded basundi, then you need to add them while the milk boils.)
Tip - You can make Basundi even without the milk powder, but it'll take more time to reduce the milk.
