Dry Cabbage
One of the simplest vegetable preparations you can make is the Sukhi Kobi. It hardly takes any preparation time and even the cooking time is minimal, so you can prepare this vegetable whenever you need. Simple yet tasty - you're sure to love this recipe of cabbage. Let us have a look at its recipe. 

Ingredients (3-4 Servings) :

  • Cabbage - 750 g
  • Onions - 3
  • Green chillies - 3
  • Curry leaves - 3 stems
  • Mustard seeds (Rai) - 1 tbsp
  • Cumin seeds (Jeera) - 1 tbsp
  • Compound Asafetida (Hing) - 2 pinches
  • Potatoes - 2 (Optional)
  • Soaked Chana Dal - 4-5 tbsp (Optional) 
  • Turmeric powder - 1/2 tsp
  • Sugar - 1 tsp
  • Salt to taste
  • Oil for frying - 4-5 tbsp
Method :
  • If you are using chana dal, soak it for an hour or so.
  • Now, heat oil in a utensil and add the soaked chana dal to it. Fry it for 3-4 minutes.
  • Add cumin seeds, mustard seeds to it and let it splutter.
  • Add finely chopped green chillies, compound asafetida and curry leaves to it, fry it for a minute and add finely chopped onions to it.
  • After the onions turn golden, add potato cubes to it. (Optional). Fry it for a minute and add turmeric powder to it and let it fry.
  • Add the finely chopped cabbage to it along with salt and sugar, mix it thoroughly and cover it with a lid.
  • Cook it till done. (It'll take around 15-20 minutes for it to cook)
