Kothmir Vatana
Kothmir Vatana is a very healthy dish. It is an antioxidant and greatly helps flushing out the kidneys. It helps in cooling down the system. Over and above all its health benefits, it's delicious and you'll surely enjoy it for the taste itself. This method of preparing the dish is specially popular among Parsis, in fact, "Kothmir Vatana par Eedu" is also very popular which is prepared by adding eggs on top of it. Let us have a look at its recipe.

Ingredients (3-4 Servings) :

  • Coriander leaves - 3 big bunches
  • Green peas - 250 g
  • Onions - 3
  • Spring Onions - 1 bunch
  • Tomato - 1 (Optional)
  • Ginger paste - 1 tsp
  • Garlic - 6-7 cloves
  • Green chillies - 2-3
  • Cumin seeds (Jeera) - 1 tsp
  • Compound Asafetida (Hing) - 1-2 pinches
  • Powdered Spices - Turmeric powder - 1/2 tsp, Kashmiri chilli powder - 1-1 and a half tsp
  • Sugar - 1 tsp
  • Salt to taste
  • Oil for frying - 4-5 tbsp
Method :
  • Throughly wash the coriander leaves atleast 2-3 times and chop it finely.
  • Heat oil in a utensil and add finely chopped garlic and let it fry for a minute.
  • Now, add the finely chopped green chillies, cumin seeds, asafetida and finely chopped onions to it and let it the fry till the onions are halfway done.
  • Now, add finely chopped spring onions and green peas to it and let it fry till they turn soft.
  • Add salt, sugar and ginger paste to it and let it fry for a minute or so.
  • Now, add the powdered spices to the mixture and it fry till oil separates from the mixture.
  • Add finely chopped coriander leaves to it and let it cook for 20-25 minutes or till it's done.
