Suran ma Gos | Yam and Mutton in gravy

Suran ma Gos

 Suran, also known as Yam, is a very healthy vegetable as it is rich in fiber and is good for the digestive system. While Suran itself is very bland, we can make it in an interesting way like this one and you are sure to relish it. Let us have a look at its recipe.

Ingredients (3-4 Servings) :

  • Yam (Suran) - 500-750 g
  • Mutton - 8-10 pieces
  • Onions - 3
  • Cinamon - 2 inch stick
  • Whole black pepper - 6-7 
  • Green Chillies - 2-3
  • Kashmiri Chillies - 2
  • Cumin Seeds (jeera) - 1 tbsp
  • Garlic - 6-7 cloves
  • Ginger paste - 1 tsp
  • Powdered spices - Turmeric powder - 1/2 tsp, Kashmiri chilli powder - 1 tsp, Garam Masala powder - 1/2 tsp
  •  Sugar - 1 tsp
  • Oil for frying - 4-5 tbsp
  • Salt to taste
Method :
  • Heat oil in a pressure cooker and add finely chopped garlic and fry them for a few seconds.
  • Now, add cumin seeds and lightly crushed Kashmiri chillies to it and let it fry for a minute on low flame.
  • Add finely chopped green chillies, cinamon and whole black pepper to it and let it fry for a few seconds.
  • Now, add the finely chopped onions to it and them fry till they turn golden-brown.
  • Add sugar, salt and ginger paste to it and let them fry for a minute.
  • Now, add the powdered spices to it and fry them till the oil separates from the mixture.
  • Add mutton pieces to it and fry them for 2 minutes.
  • Add pieces of suran to it and fry for another 2 minutes.
  • Add 2 glasses of water (approximately 400 ml altogether) and pressure cook it for 4 whistles and 20 minutes on low flame.
  • Once the pressure from the cooker is released, you can serve them.
Tip - If you want to make suran and mutton a little dry, add only 1-1 and a half glasses of water to it.
It tastes really good when had with potato straws.
