Kaju Katli
Kaju Katli is a very tasty and popular Indian sweet (Mithai). I'm sure you must have enjoyed many times but do you know that it's actually easy to make and can be made with just 4-5 ingredients? Go ahead, try and enjoy it.
Ingredients (for 30-35 pieces):
- Cashew Nuts (Kaju) (Broken or whole) - 500 g
- Sugar - 400 g
- Green Cardamom (Choti Elaichi) powder - 1 tsp
- Ghee - 1 tbsp
- Silver Vark (Edible Silver sheets) - 4-5 (optional)
Please Note : Make sure you do not make any changes in the quantity or method to get perfect results.
Method:
- Refrigerate the chashew nuts for 4-5 hours.
- After taking it out, grind it finely by pulsing the grinder for roughly 5 seconds at a time. If you grind it too much, it will become a paste which won't work well for this recipe.
- Now, sieve the powdered cashews in a utensil. Whatever large sized cashew bits remain after sieving can be reground in a similar manner and sieved again.
- Now, prepare 1 strand sugar syrup by boiling 400g sugar in 200 ml water till it reduces and forms 1 strand.
- Turn off the stove once the syrup is reduced enough to form 1 strand when you check it between your thumb and finger.
- Add green cardamom powder, ghee and sieved cashew powder to the syrup, stirring it continuously till it turns into a very soft and smooth dough.
- Once it is halfway cooled, grease a butter paper with a little ghee and spread the dough evenly over a it with a greased rolling pin, preferably in a rectangle, keeping it half centimetre or less in thickness.
- Let it cool down to room temperature and gently stick the silver vark randomly over it.
- Cut it into diamond shapes using a greased knife. (Don't separate the pieces at this point)
- For better results, refrigerate it for 6-8 hours before consuming.
