Kharia (in Chora) | Trotters in Black-eyed Beans | Paya in Chawli

 

Kharia (in Chora)
Kharia is considered a popular delicacy among Parsis and is usually prepared along with beans/lentils, example - Black-eyed Beans, Black Masoor etc. My favourite is to prepare with black-eyed beans. Let us have a look at its recipe.

Ingredients (4 Servings):

  • Trotters (Kharia) - 9-12
  • Black-eyes Beans (Chora) - 100 g
  • Onions - 2-3
  • Tomato - 1
  • Green chillies - 2
  • Kashmiri red chillies - 2
  • Cumin seeds (Jeera) - 1 tbsp
  • Garlic - 6-7 cloves
  • Ginger paste - 1 tsp
  • Powdered spices - Turmeric powder - 1/2 tsp, Kashmiri chilli powder - 1/2 tsp, Dhanajeera powder - 1 tsp, Sambar powder - 1/2 tsp, Garam Masala powder - 1/2 tsp
  • Coriander leaves - 1/2 cup
  • Salt to taste
  • Sugar - 1 tsp
  • Oil for frying - 4-5 tbsp
  • Any flour for cleaning - 2 tbsp
Method: 
  • Cut each trotter into 4 pieces and add any flour to it. Scrub each piece of trotter with the flour to clean it thoroughly.
  • Wash them with water and keep aside.
  • Heat oil in a pressure cooker and add finely chopped garlic to it and let it fry for a few seconds.
  • Add cumin seeds, finely chopped green chillies and Kashmiri red chillies to it and let them fry for a few seconds again.
  • Add finely chopped onions to it and fry them till they turn golden-brown.
  • Now, add salt, sugar and ginger paste to it and let them fry for a few seconds.
  • Add finely chopped tomato to it and let it fry till it turns soft.
  • Add the powdered spices to it and fry them till the oil separates from the mixture.
  • Add the trotters to it and mix thoroughly. Let it fry in open for around 5 minutes. 
  • Add 2-2 and a half glasses of water to it and pressure cook it for 2 whistles and 20 minutes on low flame. 
  • Once the pressure from the cooker is released, add black-eyes beans to it and pressure cook it again for 4 whistles and 20 minutes on low flame.
  • Once the pressure from the cooker is released, add finely chopped coriander leaves to it.
