Ravaiya Papeta | Vangi Batata | Baby Brinjal with Potatoes
Baby bringal is known as Ravaiya in Gujarati and Vangi in Marathi. I have prepared the baby brinjals in combination with potatoes in dry style which tastes simply YUM! Let us have a look at its recipe.
Ingredients (3-4 Servings) :
- Baby Brinjal - 500-600 g
- Potatoes - 2-3
- Onions - 3
- Cumin Seeds (Jeera) - 1 tsp
- Compound Asafetida (Hing) - 1-2 pinches
- Ginger paste - 1/2 tsp
- Garlic - 6-7 cloves
- Green Chillies - 2-3
- Powdered Spices - Turmeric powder - 1/2 tsp, Kashmiri chilli powder - 1 tsp
- Coriander leaves - 1/2 cup
- Salt to taste
- Sugar - 1 tsp
- Oil for frying - 4-5 tbsp
Method :
- Heat oil in a pan, add finely chopped garlic to it and fry till they are golden-brown.
- Now, add cumin seeds to it and let it fry for a few seconds.
- Add finely chopped green chillies to it and let it fry for a few seconds.
- Now, add finely chopped onions and compound asafetida to it and fry till they turn golden-brown.
- Add sugar, salt and ginger paste to it and fry for a few seconds.
- Add the powdered spices to it and let it fry till the oil separates from the mixture.
- Remove the green stem from each baby brinjal and cut each into four cubed pieces.
- Peel and cut the potatoes into 1 inch pieces and add it to the mixture along with the baby brinjal pieces. Mix well and cover it with a lid.
- Let it cook, stirring it occasionally, till the baby brinjal and potatoes are soft.
- Add finely chopped coriander leaves right before turning off the stove.
