Beetroot Sabzi
Beetroot, also known as Chukandar, is a very healthy root vegetable as it increases hemoglobin levels, improves eyesight and is high in calcium. It also helps in liver detoxification. It has a natural mild sweetness that kids would also like. The recipe below will give you a delicious preparation that you are sure to enjoy.
- Beetroot - 6
- Onions - 2-3
- Ginger Paste - 1/2 tsp
- Mustard Seeds - 1 tbsp
- Cumin Seeds (Jeera) - 1 tbsp
- Curry Leaves - 2 stems
- Green Chillies - 3
- Powdered Spices: Kashmiri chilli powder - 1/2 tsp, Turmeric powder - 1/4th tsp, Dhanajeera powder - 1 tsp, Garam Masala powder - 1/4th tsp
- Coriander Leaves - 1/2 cup
- Salt to taste
- Oil for frying
Method:
- Pressure cook the whole beetroots for 4 whistles and 15 minutes on low flame.
- In the meanwhile, heat oil in a utensil and add mustard seeds, cumin seeds, finely chopped green chillies and curry leaves to it. Let them fry for a minute.
- Add finely chopped onions to it and let it fry till they turn soft.
- Add salt and ginger paste to it and let it fry for a minute.
- Add the powdered spices to it and let it fry for a minute.
- Once the pressure from the cooker is released, peel the beetroot and chop them finely.
- Add the chopped beetroot and finely chopped coriander leaves to the mixture and let it cook for 10 minutes on low flame, covering it with a lid. Make sure they turn absolutely soft.
