Khaman na Larva

 

Khaman na Larva is a traditional Parsi sweet dish which is easy to make at home and is made using just a few ingredients. You could call it the Parsi version of Ukadiche Modak. Let us have a look at its recipe.

Ingredients (8-10 Ladoos):

  • Rice Flour - 200-250 g
  • Coconut - 1/2 
  • Jaggery - 75 g
  • Sugar (optional) 
  • Green Cardamom (Chhoti Elaichi) Powder - 1/2 tsp
  • Raisins - 10-12
  • Dry fruits of your choice 
  • Ghee - 1-2 tbsp
Method:
  • For the filling, grate the coconut and keep aside.
  • In the meanwhile, heat 1 tbsp ghee in a utensil and lightly fry the grated coconut, raisins and dry fruits just for a minute.
  • Add jaggery to it and mix it continuously until it melts.
  • Taste the mixture to check the sweetness. If you want the mixture to be sweeter, either add sugar or more jaggery to it.
  • Add most of the green cardamom powder to it and keep aside a bit for later.
  • Let the mixture cool down.
  • For the dough, heat 1 tbsp ghee in another utensil and add 2-3 glasses of water to it. Bring it to a boil.
  • Add the rest of the green cardamom powder and rice flour to it and keep stirring till it forms a firm dough.
  • Let the mixture cool down.
  • Now, divide the dough and filling into equal portions. 
  • Flatten each portion of the dough with a rolling pin into 5-6 inch circles. 
  • Take one flattened dough portion in the palm of your hand, place one portion of filling in the centre, then wrap the sides around the filling to form a ladoo shape. Twist the top and remove excess dough from the top, if necessary.
  • Repeat the above three steps for the remaining portions. 
  • Steam them for 10 minutes, either in a steamer or a cooker (without whistle). 
  • Once done, let it cool down and refrigerate it.
