Bheeda par Eedu | Eggs on fried Okra/Lady Finger

 

Parsis love everything par eedu and bheeda paar eedu is right on top of the list. It is very simple to cook yet extremely delicious. It can either be had a main course or as a side dish. Let us have a look at its recipe.

Ingredients (3 Servings):

  • Lady Finger/ Okra  - 750g to 1  kg
  • Eggs - 3
  • Asafetida (Hing) - 2 - 3 pinches
  • Oil for frying  - 7-8 tbsp
  • Salt to taste
  • Turmeric powder (optional) - 1/4th tsp
  • Cumin Seeds (optional) - 1 tsp
Method:
  • Finely chop the okra as seen in the picture.
  • Heat oil in a kadhai/ wide frying pan and add cumin seeds and okra to it. 
  • Once it is halfway done, add asafetida and turmeric powder to it and let it cook till okra turns soft and dark. 
  • Once it is done, add salt to it and gently mix it evenly. 
  • Break eggs over the cooked okra, sprinkle salt over them and let it cook till the eggs are done, covering it with a lid.
