Veg Kofta

 



Indulge in the melt-in-your-mouth delight of Veg Kofta – crispy, golden balls of paneer and potato in a rich, aromatic gravy!

Ingredients (3-4 servings):

For Kofta:

  • Potatoes - 3
  • Paneer - 200g
  • Green Chillies - 5-6
  • Kashmiri Red Chilli Powder - 1/2 tsp
  • Turmeric Powder - 1/4th tsp
  • Salt to taste
  • Coriander leaves - 1/2 cup
  • Corn flour - 2 tbsp
  • Oil for deep frying
For Gravy:
  • Onions - 3
  • Tomatoes - 3-4
  • Cashew nuts - 10-15
  • Garlic - 8-10 cloves
  • Grated Ginger - 1/2 tsp
  • Cumin Seeds (Jeera) - 1/2 tsp
  • Sugar - 1 tbsp
  • Green Chillies - 3-4
  • Powdered Spices: Turmeric powder - 1/4 tsp, Kashmiri Red Chilli Powder - 1/2 tsp, Dhanajeera Powder - 1 tsp, Garam Masala Powder - 1/2 tsp
  • Coriander leaves - 1/2 cup
  • Whole Garam Masalas: Cinamon - 1 inch, Cloves - 4-5, Whole Black Pepper - 5-6, Green Cardamom (Chhoti Elaichi)- 3, Black Cardamon (Badi Elaichi) - 1
  • Salt to taste
  • Oil for frying
Method:
  • Boil potatoes till they are soft and mash them thoroughly. 
  • Grate Paneer and mix it with the mashed potatoes. 
  • Add green chillies, Kahmiri Chilli Powder, Turmeric Powder, salt and finely chopped coriander leaves to this mixture and make a tight dough.
  • Make balls of the dough using equal proportions of the mixture, coat them in corn flour and deep fry them till they turn golden brown. Keep them aside.
  • Coming to the gravy, fry roughly chopped onions, roughly chopped tomatoes, cashew nuts, garlic, grated ginger, whole garam masalas, cumin seeds, sugar and green chillies till the onions and tomatoes are halfway cooked.
  • Once the mixture cools down completely, grind it all in a mixer to form a smooth paste. 
  • Now, add oil to a utensil and add this mixture to it. Mix it thoroughly till it thickens a bit.
  • Add salt and powdered spices to it and cook for another 5-10 minutes till the oil separates from the mixture. 
  • Add water little by little, till you get the gravy of your desired consistency. 
  • Let it boil for another 5 minutes on low flame with the lid covered. 
  • Turn off the stove and add finely chopped coriander leaves to it. 
Note: The Koftas and Gravy are to be mixed just before serving and not beforehand.
