Maharashtrian Style French Beans
Maharashtrian-style French Beans is a simple, wholesome stir-fry made with just a handful of everyday ingredients. Lightly spiced with traditional flavors, it comes together quickly while keeping all the natural nutrition of the beans intact. Perfect for a healthy, fuss-free meal.
Ingredients (3-4 servings):
- French Beans: 500-600g
- Potatoes: 2 (Medium sized)
- Green Chillies: 3
- Coconut: 1/2
- Curry Leaves: 2 stems
- Cumin Seeds: 1 tsp
- Turmeric Powder: 1/4th tsp
- Sugar: 1 tsp
- Salt to Taste
- Oil for Frying
Method:
- Heat oil in a pan and add the cumin seeds, finely chopped green chillies and curry leaves to it.
- After a minute, add chopped potatoes. (Potato pieces to be chopped in the size as shown in the image)
- Add salt and turmeric powder to the mixture and let it fry for 2 minutes.
- Add finely chopped French Beans and let it cook for 5 minutes.
- Now add the grated coconut, sugar and the water from the same coconut. The coconut water is optional but will enhance the flavour considerably.
- Cover it with a lid and let it cook for around 15 minutes, or till the French Beans and Potatoes both get tender.
