Stuffed Chillies
Stuffed Pikador chillies make for a delicious and slightly different addition to the meal when prepared this way. Stuffed and shallow-fried until golden and tender, they have a wonderful balance of spice. They are incredibly easy to make and pair perfectly with dal, rice, roti or even as a snack on their own.
Ingredients:
- Yellow Farsan Sev (Made of Gram Flour): Approximately 50 g
- Roasted Peanuts: 1 fistful
- Roasted Chana (Bengal Gram): 1 fistful
- Garlic: 7-8 cloves
- White Sesame Seeds: 25 g
- Kashmiri Chilli Powder: 1/2 tsp (Optional)
- Salt to taste
- Oil
- Pikador Dark Green Chillies: 8-10
- Juice of 1/2 lemon
Method:
- Slit the Pikador chillies on only one side (so that the stuffings can be filled in it), and leave it aside
- Now, make the stuffing by coarsely grinding the rest of the ingredients (with only 1-2 tbsp oil) in a mixer on pulse mode.
- Take the mixture out and stuff them fully into each of the Pikador chillies. Make sure the chillies look fully stuffed.
- Now, heat oil in a frying pan for shallow frying and each of the Pikador chillies after the oil turns hot. (The oil should be medium-hot, not very hot)
- Fry them from all sides, turning the chillies one by one till they turn golden brown and soft.
