Bhokhra
Bhokhra is a sweet Parsi cookie loved by all the Parsis.
Ingredients (30 Pieces) :
- Wheat Flour - 2 Cups
- Maida - 1 Cup
- Fine Rava - 1 Cup
- Sugar / Castor Sugar - 2-3 Cups
- Baking Soda (Optional) - 2 Pinches
- Baking Powder - 1 Tbsp
- Salt - 1/2 Tsp
- Eggs - 2
- Vanilla Essence - 2 Tsp
- Cardamom Powder - 1 Tbsp
- Nutmeg Powder - 1 Tsp
- Ghee - 3-4 Tsp
- Curd - 1/2 Cup
- Oil - Enough to deep fry
Method :
- Mix the wheat flour , maida and fine rava , baking powder and baking soda.
- Break two eggs in a utensil and add sugar , vanilla essence , cardamom powder and nutmeg powder to it and whisk it till the sugar almost dissolves.
- Add the mixture to the dry mixture and try making a dough.
- Add the curd and knead it.
- Add ghee to it and let it rest for minimum 4-5 hours.
- After 4-5 hours , take roll out 1/4th of the dough at a time keeping it half centimetre in thickness , take a tiny bowl and cut out circles from the rolled dough.
- Repeat this till all the dough is used out.
- Heat the oil , and test it by dropping a tiny ball of the dough and if it rises to the top immediately , then the oil is ready for frying.
- Fry the cut-outs in batches , keeping the oil on medium flame and fry them on both sides till they turn brown like in the picture.
Tip : If you want the bhokhras to be crispier , you can take more Rava,.
