Aloo Papdi Sabzi recipe | Indian Broad Beans

 

Papdi , also known as Indian Broad Beans is a healthy vegetable as it reduces the risk of iron deficiency. It is a vegetable that is usually that is had more during winters. Let us have a look at its recipe.

Ingredients :
  • Papdi - 500 g 
  • Potatoes - 1-2
  • Garlic - 10 cloves
  • Ginger Paste - 1 Tsp
  • Onions - 3 
  • Tomato - 1
  • Ajwain - 1 Tbsp
  • Cumin Seeds (Jeera) - 1 Tsp
  • Kashmiri Chilli Powder - 1 Tsp
  • Turmeric Powder - 1/2 Tsp
  • Dhanajeera Powder - 1 Tbsp
  • Asafoetida (Hing) - 2 Pinches
  • Sugar - 1 Tsp
  • Salt to Taste 
  • Oil - 4-5 Tbsp
Method :
  • Heat oil in a utensil and add 5 chopped garlic , 5 whole garlic , ajwain and let them fry for 2 minutes.
  • Add asafoetida and finely chopped onions to it and fry them till they are soft.
  • Add finely chopped tomatoes , cook them till they are soft and add ginger paste to it.
  • Now , add Turmeric powder , Kashmiri Chilli Powder , Dhanajeera Powder , sugar and salt to it and let them fry for 2 minutes.
  • Chop the potatoes to the desired shape and size and add it to the mixture along with the chopped papdi.
  • Cover the utensil with a lid and cook it for about 20-25 minutes , till it is done.
