Kanda Boomla no Patio

 

Kanda Boomla no Patio is a Parsi Dish usually enjoyed with Khichri or by itself. It tastes extremely delicious due to its sweet and sour flavour. "Sukka Boomla" as we Parsis call the dried Bombay duck , has a strong and distinctive flavour , so this lends a rich aroma and taste to this dish. Let us have a look at its recipe.

Ingredients (3-4 Servings) :
  • Onions - 8-10
  • Dried Bombay Ducks - 20-25
  • Jaggery - 2 inch cube
  • Sugar - 1 Tbsp
  • Vinegar - 2 Tbsp
  • Kashmiri Chilli Powder - 1 Tsp
  • Turmeric Powder - 1/2 Tsp
  • Oil - 7-8 Tbsp
  • Salt to Taste
Method :
  • Heat oil in a utensil , add finely chopped onions to it and let it fry till they become brownish.
  • Add salt , sugar and jaggery to it.
  • Break each dried bombay duck into approximately 3 pieces , marinate it with Kashmiri Chilli Powder and Turmeric Powder for around 20-30 minutes and add them to the onion mixture.
  • Cook them for around 20 minutes (or till they become soft).
  • Add vinegar to it and let it cook for 5 more minutes.
