Masala Dosa

Ingredients for Potato Sabji (3 Servings) :
- Potatoes - 6 (Medium-sized)
- Onions - 2-3
- Ginger Paste - 1/2 tsp
- Garlic - 4-5 Cloves
- Chana Dal - 2-3 tbsp
- Curry Leaves - 2-3 stems
- Green Chillies - 2-3
- Mustard Seeds - 1 tbsp
- Cumin Seeds (Jeera) - 1 Tsp
- Asafoetida (Hing) - 2-3 Pinches
- Turmeric Powder - 1/2 tsp
- Amchur (Raw mango) Powder - 1/2 tsp
- Sugar - 1-2 Tsp
- Oil - 5-6 Tbsp
Method :
- Boil the peeled potatoes and keep aside. They should be 90% boiled beacuse they do not need to mashed completely.
- Heat oil in a utensil and add chana dal to it. Let it fry for 10 minutes.
- Add finely chopped garlic, green chillies, mustard seeds, cumin seeds and curry leaves to it. Cook them for a minute.
- Now, add finely sliced onions to it and cook till they turn soft.
- Add sugar, salt and ginger paste to it. Cook for a minute.
- Add turmeric powder, Amchur powder and asafoetida to it.
- Add the potatoes to the mixture, mashing them lighly, mix well and cook them for 2 minutes. (Here they do not need to be completely mashed, they only need to be semi-mashed.)
