Kanda Bhajiya (Onion Fritters)

 


Kanda Bhajiya (Also known as onion fritters or pyaaz ke pakode) is a snack item and a common street food in Mumbai. It is commonly had along with Vada Paw. The snack item is most relished during the rainy season and in winters and is best served hot. Homemade Kanda Bhajiya can be as tasty as the ones served on the streets and is a healthier alternative to the street food. It can be made with little effort. 
This type of bhajiya is also known as Kekda (Crab-style) Bhajiya because of the typical crab-like appearance that it gets when we drop the batter into the oil by a spoon. If we were to drop the batter , making rounds by hand , then the bhajiya would get a more rounded shape. Let us have a look at its recipe.


Ingredients (Makes 12 Bhajiyas) :
  • Gram Flour (Besan) - 2 Cups
  • Ajwain - 1 Tbsp
  • Turmeric Powder - 1/4 Tsp
  • Cumin Seeds (Jeera) - 1 Tsp
  • Onions - 2-3
  • Salt to Taste
  • Ginger Paste - 1/2 Tsp
  • Sugar - 1 Tsp
  • Kashmiri Chilli Powder (Optional)
  • Oil to deep fry
Method :
  • Cut the onions into thin slices and add everything to it EXCEPT the gram flour.
  • Mix well and leave aside for 15 minutes.
  • Now, add the gram flour to it , mix it with the rest of the ingredients and leave aside for 5 minutes.
  • Add water to the mixture enough to make it a thick paste.
  • Heat the oil in a Kadhai on high flame , and to check whether the oil is hot enough , add a tiny bit of the mixture in it and if it rises up immediately , it means the oil is ready for frying.
  • Start dropping one tablespoonful of the mixture into the oil , keeping a little distance between each lot.
  • Fry them until their brown like in the picture.
It is best served with tomato ketchup or green chutney.
