Vengna nu Bharat
Bharat is a Gujrati version of
Baingan Bharta
and goes well with
Khichdi
. It is usually enjoyed by Parsis in winter. The main reason it is had during
winter is that the quality of brinjal is better as it doesn't contain too much
of water in winter , and hence the flavour is enhanced . It helps to keep the
body warm during winters. It is one of the rarest dishes that taste delicious
despite not adding any powdered spices to it. Let us have a look at its
recipe.
Ingredients (3 Servings) :
- Bringal - 750 g
- Spring Onions (Green Onions) - 1 bunch (Approx 5 pieces)
- Green Garlic (Lilu Lasan) - 20
- Green Chillies - 3-4
- Cumin Seeds (Jeera) - 1 Tbsp
- Onions - 2
- Ginger Paste - 1/2 Tsp
- Coriandar - 1/2 Cup
- Sugar - 1 Tsp
- Salt to taste
- Oil for frying
Method :
- Heat oil in a utensil and add finely chopped green garlic , spring onions , onions , green chillies and cumin seeds and fry them till the onions are soft and pink.
- Now , add ginger paste , salt and sugar and fry them for 5 minutes.
- Meanwhile , roast the brinjal directly on the stove till they become soft. (It takes around 5-10 minutes to roast each brinjal )
- Let it cool and peel of the skin from the brinjal and mash them well.
- Now , mix the mashed brinjal with the mixture previously made and cook it for 10 more minutes , covering it with a lid.
- Add finely chopped coriander, 2 minutes before turning off the stove.
